Dum Aloo Recipe

Dum aloo recipe or Baby Potato recipe is a dish made with small potatoes, that is part of traditional Kashmiri cuisine, It is a spicy vibrant curd based gravy that can be served with types of rice and parathas.

Ingredients for dum aloo recipe:

  • Baby potatoes: 8-10
  • Oil: 2½ tablespoon
  • Cumin: ½ tablespoon
  • Red chili powder: 1 ½ teaspoon
  • Turmeric powder: 1 teaspoon
  • Cumin-coriander powder: 2 teaspoon
  • Salt to taste
  • Ground spices: 2 tablespoon
  • Yogurt: 2 cups (200gram)
  • Cream: 2 tablespoon
  • Onions: 1 medium chopped
  • Tomatoes: 1small chopped
  • Bay leaf: 1
  • Cinnamon: 1inch
  • Fennel seeds: 1tablespoon
  • Cardamom: 1
  • Black pepper:3-4
  • Green chili: 1 chopped
  • Ginger-garlic paste: ½ tablespoon
  • Coriander leaves: 3-4 finely chopped
  • Fenugreek powder: 1tablespoon

 

How to cook dum aloo recipe:

  1. First of all pill all the baby potatoes and rains with fresh water and cook the potatoes in pressure cooker till 2 whistles.
  2. Now prick all the potatoes by using the fork, so that they can easily observe all the flavors.
  3. Then take the small bowl and add 2 tbsp of curd, ½ tsp turmeric powder, ½ tsp red chili powder and 1tsp of ground spice powder, mix all the spices well and make a thick paste.
  4. Put this paste on boil potatoes and coat the potatoes nicely, leave the coated potatoes for 10minutes as it is.
  5. Now take the blender and add fennel seed, cinnamon, cardamom, black pepper and 1 cup of yogurt.
  6. Grind the mixture and take the flavor full curd in a bowl and keep aside.
  7. Now heat some oil in a deep pan for frying coated potatoes.
  8. On medium flame and deep fry this coated potatoes after 10 minutes.
  9. Potatoes should not be very hard and very crispy from outside, fry till they are golden brown.
  10. Take them out and keep aside for cool.
  11. Take another pan and heat 2 tbsp oil when it’s hot enough add cumin seeds, ginger-garlic paste, chopped green chili and chopped onions and saute them for 5-6 minutes.
  12. Then add chopped tomatoes and cook for 7 minutes till they nicely cooked.
  13. Take these veggies in a bowl and leave the oil inside the pan, let them aside for cool down.
  14. Now grind all the cool veggies and make a thick paste.
  15. In the same pan heat the oil and add the paste in heated oil and mix and stirring continuously until the oil starts separating.
  16. Now oil start floating on top then add flavor full curd and mix on a low heat.
  17. Add turmeric powder, red chili powder, cumin-coriander powder and ground spices powder, mix it well and add ½ cup of water.
  18. Water depends on the amount of quantity that you want, keep the gravy thick.
  19. When gravy starts boiling add salt as per your taste, mix nicely.
  20. Now add fried potatoes in the gravy.
  21. Mix them gently and cook them for 5-6 minutes.
  22. Then add the cream for richness and mix well.
  23. Add fenugreek powder and chopped coriander leaves and mix nicely and serve dum aloo hot.
  24. dum aloo recipe is ready to serve.
  25. Serve with paratha or butter roti.
